Hidden Beijing Guide

Peking Duck is Beijing's signature dish and one of the most celebrated foods in Chinese cuisine. With its lacquered crispy skin and tender meat, served with delicate pancakes and sweet bean sauce, this imperial dish offers a dining experience unlike any other. This guide covers everything you need to know about enjoying authentic Peking Duck in Beijing.

History & Tradition

Peking Duck has a history spanning over 600 years, originating in the imperial kitchens of the Ming Dynasty. The preparation method involves inflating the duck with air, coating it with maltose syrup, and roasting it in a closed or hung oven. The result is skin so crispy it melts in your mouth while the meat remains succulent. Traditional serving involves slicing the duck at the table by a skilled chef.

Best Restaurants

Quanjude (established 1864) is the most famous name, with multiple locations including the flagship on Qianmen Street. Dadong is renowned for its leaner, less fatty ducks and modern presentation. Siji Minfu is a local favorite offering excellent quality at moderate prices. Jingzun provides good value. Li Qun is a hidden gem in a hutong setting. Reservations are essential at all top restaurants.

How to Eat Peking Duck

The duck is served in courses. First, the crispy skin is presented with sugar for dipping. Then, the meat is sliced and served with thin pancakes, scallions, cucumber, and sweet bean sauce. Spread sauce on the pancake, add duck and vegetables, then roll and eat. The remaining carcass is often made into soup or stir-fried. A whole duck serves 3-4 people.

Prices & Tips

Prices range from 150 RMB at budget restaurants to 400+ RMB at high-end establishments. Whole ducks typically cost 200-300 RMB at mid-range places. Lunch is often cheaper than dinner. Go with a group to share costs and try more dishes. Book at least a day in advance. Arrive hungry - a full duck feast is substantial. Don't wear your best clothes as carving can be messy.
